Crockpot Pork Tacos

Crockpot Tomatillo Pork Tacos

Ingredients
  

  • Boneless Pork Roast
  • 1 large can tomatillos or jar of green salsa
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1/2 chopped onion
  • 1 chopped jalapeno optional, depending on how spicy you prefer

Instructions
 

  • Put pork roast in the crockpot.
  • Chop tomatillos, onion, and jalapeno in the food processor.
  • Stir spices into tomatillo mix.
  • Pour over pork roast, and cook on low for 6 hours or until tender.

Pork - 1 Red
Vegetables - 1 Green
Add 1 Yellow (rice, quinoa, or corn tortillas)
This pork roast falls apart in the crockpot.  It’s moist and yummy.  We serve it in corn tortillas, on top of salad, or over brown rice or quinoa topped with taco fixings.  We sometimes use the leftovers on nachos or to make pork enchiladas.
