Happy Cinco de Mayo! I have a yummy recipe to share with you that sort of goes along with the festivities! It’s a quesadilla, so that’s Mexican food, right?
I’ve been trying to add a lot more vegetables to my recipes. This was a fun, yet unusual, combination. I cooked the sweet potatoes in Brummel & Brown spread which contains half the fat and calories of butter. So while I don’t count calories, I’m still aware of them and try to keep my meals balanced.
Brummel & Brown has yogurt added, so it’s super creamy. It’s awesome on baked sweet potatoes sprinkled with a little cinnamon. I considered sharing that with you, but it’s not exactly a recipe, so instead, I hope you enjoy this yummy quesadilla.
Sweet Potato Quesadillas
Ingredients
- 1 large sweet potato shredded
- 1 cup baby spinach leaves
- 1/2 sweet onion sliced
- 2 T. Brummel & Brown spread
- 8 flour tortillas
- Optional Toppings: salsa avocado, sour cream
Instructions
- Using a cheese grater or food processor, shred sweet potato.
- Melt 1 T. Brummel & Brown spread in a frying pan.
- Add shredded sweet potato and sliced onions and cook until potato is softened.
- Put 1/4 of potato mixture on a flour tortilla, top with 1/4 cup spinach leaves, 1/4 cup mozzarella and another tortilla. (Repeat for each quesadilla.)
- Melt a small amount of remaining spread in pan and fry quesadilla on both sides until lightly browned.
- Optional: Top with salsa, avocado, and sour cream.
Step-by-step Directions
1) Shred one large sweet potato with a cheese grater or food processor.
2) Melt Brummel & Brown spread in frying pan. Add shredded sweet potatoes and sliced onion.
3) Cook until sweet potato is soft and cooked through.
4) Remove sweet potatoes from pan and add a teaspoon of spread to pan.
5) Place tortilla in pan and top with sweet potato/onion mixture, spinach, mozzarella cheese and another tortilla.
6) Cook until cheese is melted and tortilla is crispy and slightly browned.
The Brummel & Brown spread helped brown the tortilla nicely. It had a crisp, buttery taste. Even my kids liked them.
