I love sweet potatoes! A fun way to eat them is making homemade sweet potato chips. They are a super delicious clean eating snack idea. My kids love them, so every time I make them, they disappear. They are super easy and it’s fun to try new varieties. You can make them sweet by adding cinnamon or nutmeg. There are also lots of savory choices — dill, garlic, curry, thyme, rosemary, salt and pepper — you get the idea.
Directions
1- Wash potatoes and slice. No need to peel. (Note: I first tried slicing them with a food processor, but they were too thin and burned easily, so just slice them with a knife.)
2- Cover a cookie sheet with foil for easy clean up. Spray with non-stick cooking spray or lightly grease with olive or coconut oil.
3 – Lay slices flat with none of them overlapping. Place any thicker slices toward the edge of the cookie sheet.
4- Sprinkle with desired seasoning. (See ideas above, or make up your own.)
5- Bake at 350 for 30-40 minutes, watching closely. The time will vary based on thickness. Once they are done, the edges burn easily. If you want them extra crispy, turn them over halfway through.
6- Cool slightly and serve immediately. They tend to soften after sitting for a while, so it’s best to eat them shortly after baking.
