Slow Cooker Minestrone

Ingredients
  

  • 3 cans vegetable stock
  • 2 cups water
  • 2 cans diced tomatoes
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 cup diced yellow onion
  • 2 tsp basil
  • 1 tsp oregano
  • 1/2 tsp thyme
  • 1/2 tsp rosemary
  • 1 tsp parsley
  • 2 tsp garlic chopped
  • Salt and black pepper to taste
  • 1 small zucchini diced
  • 1 cup shell pasta
  • 1 can kidney beans
  • 1 can white beans
  • 2 cups chopped fresh spinach
  • Parmesan or Mozzarella cheese optional

Instructions
 

  • Add vegetable stock, water, and tomatoes to slow cooker.
  • Drain and rinse beans and add to slow cooker.
  • Add chopped vegetables and spices, and season with salt and pepper.
  • Cook on low heat 6-8 hours.
  • Add in zucchini, dry pasta, and garlic, and turn slow cooker to high and cook an additional 30-40 minutes until pasta is tender.
  • Stir in spinach just before serving.
  • Top with parmesan or mozzarella cheese, if desired.
